Tenuta San Pietro
Tenuta San Pietro is one of the oldest organic-biodynamic wine companies in the GAVI DOCG wine region. It is set in the rolling hills of Tassarolo town and it spreads out over 65 hectares, of ​​which 35 hectares are vineyards.

Organic-Biodynamic wines
Production of high quality organic wines. Respect for the land, the environment and nature’s cycles. No use of chemicals and synthetic products/additives. Not only a method of cultivation but a clear philosophy and way of life born from a philosophy of wellness.

Tassarolo town
The small town of Tassarolo is hilly, known since ancient times as a place of passage of pilgrims towards central Italy (Rome) and as a wine region. The first vines planted by monks on these lands date back to the year 1000.

Wine Making

Wine production method: soft crushing of grapes; the must obtained after natural decanting is fermented in stainless steel tanks under temperature control. Alcoholic fermentation occurs without using selected yeast for a period of 20/25 days. The permanence of the wine on the yeast lasts for at least 2/3 months and after cold stabilisation, is bottled at the beginning of March.

Controlled Destination of Origin Organic-Biodynamic wine from the Tassarolo region.
It is Gavi that represents the philosophy and the tradition of the company, reflecting the uniqueness of the Cortese grapes from which it derives.

Planted vineyard area: 22 ha. Grape variety: 100% Cortese.
Pruning system: traditional Guyot.
Cultivation: organic-biodynamic method. The vines are cultivated without using fertilizers and agrochemicals.
Yield: 9000 kg/ha.
Soil: limestone and clay, excellent texture, good presence of minerals. Geological zone: Tassarolo, hillside, 300 m (asl), south/east – south/west exposure. Grape harvest: half of September, hand harvesting.
Alcohol content: 12%.
Total acidity: 6 g/l.
Colour: straw yellow with a slightly greenish hue
Scent: intense notes of white flowers and fruit accentuated by a delicate minerality. Taste: fresh and full-bodied matched with elegance and pleasantness, well-balanced acidity and good persistence in its end notes.
Serve with: excellent as an aperitif, it can be matched with main courses, white meat, fish and vegetables.
Serving temperature: 8/10°C.
Storage: bottles should be stored in a cool, dry environment and at a constant temperature. In these conditions bottles can be stored for 4/5 years.
