Description
Cherry cherries. A wine of great reserve that combines a noble vinosita with a graceful and peasant bearing. The vinous tone of cherry and violet is flanked by an ancient scent of cellar. A wine for every meal par excellence, served fresh, it never pulls back and gives the refined thirst-quenching sensation typical of the wines of the past.
Red wine with a bright ruby color obtained from Ciliegiolo grapes from 15 to 50 years old. The must ferments for 10 days on the skins with the indigenous yeasts in conical trunk vats open at free temperature; then it is drawn off and placed in a cement-glass barrel where it rests all winter and undergoes its first decay with the waning moon of February. It is collected at the end of March and then bottled in early April. No sulfur dioxide is added at any stage of processing or even in final bottling. In the vineyard we follow principles of absolute respect for nature (use of sulfur and copper) and only rarely is the land enriched with fertilizer obtained from the company’s animals.
